Himmerigskov – and the private fields of Ti Trin Ned – are located a few kilometers from Fredericia and inspire and challenge us all year round. We are fascinated by the idea of authenticity, purity, safety and the magic of feeling our way. We are taken by surprise, we make mistakes and every year we are just as excited about the very first potatoes, the fragile radishes, the tiny beetroots, the large heavily scented bed of herbs and the late raspberries prolonging the summer into autumn.
Hardly, have we picked up the harvest and the last root crops of the autumn before the preparations for next year’s harvest start. Hardly, have we planted and seeded before vegetables, herbs and berries inspire us to new menus and servings.
